Apparently, we need to make our life style healthier and full of delicious food. so in order to balance between taste and health, we must eat more vegetables and get organic ingredients along with natural spices. for those who doesn’t wish to use any industrial meals or purchase any kind of junk food, this recipe will do the trick for you.

Eggplants, AKA Aubergine are a great source of antioxidants, along with fiber and potassium, a type of anthocyanin found in their deep purple skin. These privileges help protect the body from damage caused by free radicals, reducing the risk of chronic diseases.

Ingredients:

  • 500 gr of eggplant.
  • 250g of crust/quiche pastry(sold at the markets)
  • 3 Tbsp of olive oil
  • 3 eggs
  • 2 Tbsp of heavy whipping cream
  • 2 Tbsp of milk
  • 1 Tsp of Garlics powder (or two sliced cloves of garlic)
  • 50g of grated cheese
  • Parsley
  • Black pepper
  • Salt

Preparation:

  1. Wash and peel the eggplants, cut them into small squares and fry them in olive oil, leave some slices for decoration.
  2. In a bowl, put the eggs, heavy whipping cream, salt and black pepper, mix with a fork to add the fried eggplants.
  3. Pour everything on the pastry lined in a quiche mold, add the cheese and parsley on top and the saved eggplants slices.
  4. Bake for 30 minutes in the oven until the quiche is golden brown.
