Ingredients :
- • Puff pastry/quiche (sold at the market).
- 1 Chicken breast.
- 1 Grated tomato.
- 1 Small onion.
- 2 Tablespoons of olive oil.
- 100g of grated cheese •
- 50g of green olives •
- Pitted olives •
- Thyme.
- Laurel.
- Salt.
- Black pepper.
Preparation:
- In a cooking pot, fry the onion until it’s golden brown, add 1 tablespoon of olive oil, salt, black pepper and chicken breast. after you mix them well for a couple of minutes add the water and let it cook.
- In a pan, put the grated tomato, the other tablespoon of olive oil, salt, black pepper, thyme and laurel leaf, brown everything.
- After cooking the chicken, crumble it then add the olives pitted slices, mix everything together.
- Fill the tart shells, sprinkle with grated cheese and decorate with a green olive.
In this recipe, you can make a marinade for the chicken by mixing 1 teaspoon of paprika, turmeric and mustard (which is optional) and black pepper while you can add salt but I don’t honestly recommend it in the marinade of this recipe since the pies might taste salty. Mix the spices (and he mustard) with a cup of Greek yogurt or baking creme provided in the house and then pour it on the sliced chickens. mix them well and leave it in the fridge for some minutes to rest and then cook it in the pot with the other preparation steps.
