Ingredients:
- 100 g fine powdered sugar.
- 80 g roasted and crushed hazelnuts.
- 2/ can fresh cream
- 20 egg whites and yolks (separated).
- 3 tablespoons honey
- For the Chantilly cream:
- 20 tablespoons Chantilly cream powder.
- 3 tablespoons milk
- Decoration:
- Hazelnuts
How to prepare:
- In a small saucepan, put the sugar and 3 tablespoons of water. Let it boil, lower the heat and let it cook for a few minutes, stirring the small saucepan from time to time.
- When the syrup takes on a caramel color, add the hazelnuts and mix until well combined. Add the fresh cream and put it back on the heat for 5 minutes.
- Beat the yolks and honey well, then add them to the first mixture.
- Prepare the Chantilly cream: Beat the whipping cream powder with the milk until you get a cream. 5. Beat the egg whites like snow. Add to the mixture, once a tablespoon of Chantilly cream, mix without crushing and again a tablespoon of whipped egg whites like snow
And so on until both mixtures are finished. - Put it in the freezer for an hour.
